I have a third party attempting to collect a debt of $2000 and are offering a settlement of $1500. As a consumer why is it not my right to know how much my product (debt) was sold for? Did the original party receive a tax credit for selling my debt my debt?

A creditor is never obliged to reveal to you the amount they sold the debt for. Also, they are not bound to reveal if they received any tax credit for the charge off. However, you have the right to know how much you actually owed to the original creditor.
